Claudia's Salsa


SALSA

1 can black eyed peas
1 can black beans
1 can shoe peg corn

Rinse the above and put in bowl.

Add the following:
1 can Rotel tomatoes (mild)
1 bunch green onions – sliced
1 large tomato (or 3 roma tomatoes)diced
1 green pepper diced
Cilantro to taste (optional) I don't use it

1 small bottle of Italian dressing (I have used lite in the past) Pour over the mixture.
Refrigerate overnight.
