Mrs. Field's Banana Nut Bread
Mrs. Field’s Banana Nut Bread
2 ½ c. flour
1 ½ t. baking soda
½ t. salt
¾ c. salted butter, softened
1 ½ c. light brown sugar, packed
2 large eggs
3 c. ripe bananas (about 7 medium), mashed
1 t. vanilla
1 cup chopped walnuts or pecans
Preheat oven tot 325º. Grease two 9 x 5 loaf pans.
In medium bowl combine flour, soda and salt with whisk.
In a large bowl cream butter and sugar with a mixer. Add eggs, vanilla and bananas, and beat at medium speed until thick. Scrape.
Add flour mix and walnuts and blend at low speed just until combined. Do not over mix.
Pour batter into pans and bake in center rack of oven for 60-70 minutes or until toothpick in center comes out clean and bread should pull away from the sides. Cool in pans for 10 minutes. Turn pans on sides; cool to room temp before removing and slicing.
