Asiago Petites



fingerling potatoes
s and p
olive oil
asiago cheese

Cut potatoes into 3/4" coins, taking the round ends off.
Toss coins with s and p and a little olive oil.
Bake in a 400º oven for one half hour.
Let cool and with the rounded edge of a vegetable peeler, hollow out a hole
being careful not to go through the bottom.
Cut the cheese to generously fit the hole.
Return to the oven for the cheese to melt.
These are very tasty and can be served either warm or cold.
