Bruschetta


Bruschetta

fresh diced tomatoes
s and p
homemade pesto
chopped onion
fresh grated parmesan
french bread

I dice the tomatoes and lay them on paper towels to loose some of the moisture. I mix with about half as much onion as I have tomatoes. I add pesto with enough to mix nicely.

In the meantime I slice the bread and LIGHTLY spread both sides with olive oil. I bake in a 350º oven for about ten minutes.

When ready to serve I spread a generous amount of tomato mix on the bread and top with parmesan
